Naturally Leavened Sourdough

At E+O, our focaccia and raised donuts are naturally leavened, which means our dough rises without the use of conventional packaged yeast. Why do we do this? This process enables phytic acid to break down on a chemical level, so our bodies can more efficiently absorb the nutrients found in the grains. Oh, and it tastes SO much better than the processed stuff!
